Description
SwissBake’s Soft Bun Concentrate is a specially formulated concentrate to make soft and light burger buns, bread rolls, fruit breads and hot cross buns. It imparts good flavour soft crumb and increased freshness.
Key Ingredients
Soya flour, Emulsifier, Sourdough powder, Vitamin C, Enzymes.
Method
USING A SPIRAL MIXER, MIX ALL THE INGREDIENTS TOGETHER ON SLOW SPEED FOR 4 MINS AND THEN ON HIGH SPEED FOR 6 MINS. DOUGH TEMPERATURE SHOULD BE AT 20°C to 22°C. ROUND UP THE DOUGH (60GM/80GM/100GM). INTERMEDIATE PROOF NOT REQUIRED. FINAL PROOFING FOR 55 TO 60 MINS. BAKE AT 280°C to 260°C FOR 6 TO 8 MINS.
