Eggless vanilla muffins using Concentrate

Recipe to prepare delicious eggless muffins using SwissBake® Prime Base Concentrate
BAKE TEMP : 180ºC
MIXING TIME : 8 mins
BAKE TIME : 20 Mins
PREP TIME : 1 hr

Ingredients

PRIME BASE CONC. - 160 gm
REDINED WHEAT FLOUR - 1000 gm
SUGAR- 1200 gm
WHEY PROTEIN CONTENT (80%)- 3750 gm
SKIMMED MILK POWDER - 75 gm
BAKING POWDER - 24 gm
WATER - 1000 gm
OIL - 1200 gm

Method

Use a planetary mixer with the paddle attachment. Mix all the ingredients except oil on slow speed for 1 minute. Scrape the batter and mix again on medium speed for 3 minutes. Add oil, mix on slow speed for 1 minute. Pour the batter into the muffin moulds. Place the moulds in the pre-heated oven and bake at 180°C for approximately 20 minutes to 22 minutes or until baked. Remove the muffins from the oven and allow them to cool before packing or serving.
