Method
Place all the ingredients except oil in a mixing bowl. Using a whisk attachment on a planetary mixer, mix it on slow speed for about 1 minute. Beat for 5 minutes on high speed. Add oil and mix it on slow speed for 1 min. Scale the batter into a cake tin or baking tray as required. Bake at 160° C to 180° C for approximately 25 min to 30 minutes.
