Caramel Sauce – 250g to 300g
Pineapple Discs – 10 to 12 pieces
Black Peppercorns, crushed – 15g
Method
Firstly, make a caramel sauce and keep it aside
Cook the pineapple with peppercorns until slightly tender and keep it aside.
For the gluten-free cake, place all the ingredients in a mixing bowl, whisk continuously to form a batter.
Using a planetary mixer, mix at medium speed for 5 mins or until a uniform batter is formed.
Take 8x8 round tin - 2nos lined with parchment paper, pour the caramel sauce at the bottom place the pineapple slices on top of the sauce and pour the batter.
Bake at 180°C for 25 to 30 minutes.
Once the cake cools down, flip the cake upside down, cut the cake and serve it.
