Ingredients

For Gluten Free Lemon Cake Batter:

SwissBake® Gluten-Free Cake Mix – 1000g
Fresh Eggs – 600g
Sunflower Oil – 350g
Butter – 200g
Lemon Zest – 25g to 30g

For Crumble:

SwissBake® Gluten-Free Flour – 225g
Sugar – 120g
Butter, cubed – 110g
For Garnish:
Lemon Syrup – 250g

Method

  • Firstly, make a crumble out of the ingredients mentioned and keep it aside.
  • For the lemon cake batter, place all the ingredients except lemon zest in a mixing bowl, whisk continuously.
  • Using a planetary mixer, mix at medium speed for 5 mins or until a uniform cake batter is formed
  • Fold in the lemon zest and mix again for 1 min on slow speed.
  • Pour the prepared batter into the 10x10 square tin - 2nos lined with parchment paper
  • Sprinkle the crumble on top, bake at 180°C for 25 to 30 minutes.
  • Once the cake is out of the oven, pour the lemon syrup on the cake and serve it.
