Ingredients

For Gluten-Free Carrot Cake Batter:
SwissBake® Gluten-Free Cake Mix – 1000g
Fresh Carrot, grated – 700g
Fresh Eggs – 600g
Sunflower Oil – 350g
Butter – 200g
All Spice Powder – 5g

For Cream Cheese Frosting:
Icing Sugar – 500g
Cream Cheese – 250g
Fresh Cream – 70g
Vanilla Extract – 4g

Method

  • For the gluten-free cake batter, place all the mentioned ingredients except the grated carrot in a mixing bowl, whisk continuously to form a batter.
  • Using a planetary mixer, mix at medium speed for 5 mins or until a uniform batter is formed
  • Fold in the grated carrots and mix again for 1 min on slow speed.
  • Pour the prepared batter into the 10x10 square tin - 2nos lined with parchment paper and bake at 180°C for 25 to 30 minutes.
  • Whisk together cream cheese and icing sugar, then add fresh cream & vanilla extract and beat until smooth consistency.
  • Once the cake cools down completely spread the cream cheese frosting on top and serve it.
