Roasted Beetroot Hummus & High Protein Toasties Recipe Prepared by SwissBake® Prot Max P-30

Ingredients
PROT MAX 30 P30
– 1000g
Water (Cold) – 900g
Fresh yeast – 40g
Ingredients for Roasted Beetroot Hummus:
Roasted Beetroot - 7nos
Cooked Chickpeas - 800g
Water - 190g
Lemon Juice - 3nos
Olive Oil - 60g
Garlic Cloves – 80g
Salt – as per taste
Tahini - 100g
Other Ingredients:
Black Olives - 1 Bottle
Olive Oil - 1 Small bottle
Method
Make beetroot hummus using the ingredients mentioned above
Place all the SwissBake® Prot Max P30 along with other ingredients for bread in the mixing bowl.
Using a spiral mixer with a hook attachment, mix at slow speed for 4 minutes and fast speed for 15-18 minutes
Dough temperature should be between 24°C to 26°C
Bulk fermentation for 15min approx.
Scale the dough weight to 500g to 600g in a mould.
Final proofing for 50-60 mins at 32°C
Bake with lots of steam at 230°C under a falling temperature of 210°C for 50-60mins
Once it cools down completely, cut equal slices of bread.
Apply generous amount of beetroot hummus to the bread
Sprinkle some chopped black olives, drizzle some olive oil and serve it.
