Ingredients
Fruit Cake Batter:
SwissBake® Spicy Plum Cake Mix
– 1000g
Water – 550g
Vegetable Oil – 100g
Fruit & Nut Mix:
Tutti Fruity – 110g
Cashewnuts – 100g
Black Raisins – 125g
Dates – 140g
For Crumble:
Flour – 150g
Sugar – 150g
Butter, cubed – 150g
Salt – 10g
Method
Make a classic crumble out of the ingredients specified above
Using the paddle attachment on a planetary mixer, blend Swissbake® Spicy Plum Cake Mix & water at slow speed for a minute
Scrape the batter and mix again at medium speed for 3 minutes
Add oil and mix again at slow speed for 1 minute
Add 450g of the dry fruit mix to the batter and fold it gently.
Pour the batter into pound cake moulds and sprinkle the crumble on top
Bake at 160°C to 170°C for 30 to 40 minutes or until baked
Once cooled down, it’s ready to be served!
