Ingredients

Fruit Cake Batter:
SwissBake® Spicy Plum Cake Mix – 1000g
Water – 550g
Vegetable Oil – 100g
 
Fruit & Nut Mix:
Tutti Fruity – 110g
Cashewnuts – 100g
Black Raisins – 125g
Dates – 140g
 
For Crumble:
Flour – 150g
Sugar – 150g
Butter, cubed – 150g
Salt – 10g

Method

  • Make a classic crumble out of the ingredients specified above
  • Using the paddle attachment on a planetary mixer, blend Swissbake® Spicy Plum Cake Mix & water at slow speed for a minute
  • Scrape the batter and mix again at medium speed for 3 minutes
  • Add oil and mix again at slow speed for 1 minute
  • Add 450g of the dry fruit mix to the batter and fold it gently. 
  • Pour the batter into pound cake moulds and sprinkle the crumble on top
  • Bake at 160°C to 170°C for 30 to 40 minutes or until baked
  • Once cooled down, it’s ready to be served!
